Even when making the mayo from scratch, this is a quick and easy lunch option, especially when you have leftover chicken around. I toasted the pecans while I made the mayo, and then put everything together. It took about 15 minutes total.
Chicken Salad w/ Pecans and Grapes
4 cups chicken, cooked and diced
1/3 cup pecans, toasted and chopped
1 cup red grapes, halved
4 green onions, sliced thinly
1/2 cup homemade mayo (here‘s a good recipe)
4 handfuls mixed lettuce greens
