Okay, just kidding on that last one, though some New Mexican folks have probably done it, that’s how much they love their green chile sauce.
It really does go on almost anything. It will keep in your fridge for a week or your freezer for months, so make a big batch and have it around for those times your tongue needs a kick in the pants. (Do tongues wear pants?)
Green Chile Sauce
2-3 Tbsp. lard, bacon grease, or cooking fat of choice
1 onion, diced
3 cloves garlic, minced
2 cups green chile, chopped
1 tomato, diced
2 tsp. ground cumin
2 tsp. garlic powder
1-2 cups water
salt and fresh ground pepper, to taste
1) Heat cooking fat in medium pot over medium-high heat. Add onion and garlic, cooking until onion is translucent, about 3-4 minutes.
2) Stir in green chile, tomato, cumin, and garlic powder. Add water until desired consistency is reached, then reduce heat to medium-low and simmer 20-30 minutes to concentrate the flavors.
Makes 3 cups.
